Need something quick and easy for dinner… try this meal. It’s one of my favorites.
Tomato/Egg Scramble
3 Green Onions, chopped
Veg Oil
Salt/Pepper
6-9 Cage Free Eggs
6-8 Medium Tomatoes
Cooked Rice
Put the green onions and a little oil in a wok at med-high heat and cook for 3-5min. Then add the tomatoes (I prefer to cut into quarters). Add a little salt and pepper. After about 5 minutes add the eggs (not scrambled). Stir the whole concoction and add more salt and pepper to taste. Once the eggs are the consistency you like – it’s ready! Add the scramble over rice and enjoy. I like to add hot sauce on mine too… but then I like hot sauce on everything.
