<p><strong>Tomato/Egg Scramble</strong></p>
<p>3 Green Onions, chopped<br />
Veg Oil<br />
Salt/Pepper<br />
6-9 Cage Free Eggs<br />
6-8 Medium Tomatoes<br />
Cooked Rice</p>
<p>Put the green onions and a little oil in a wok at med-high heat and cook for 3-5min. Then add the tomatoes (I prefer to cut into quarters). Add a little salt and pepper. After about 5 minutes add the eggs (not scrambled). Stir the whole concoction and add more salt and pepper to taste. Once the eggs are the consistency you like &#8211; it&#8217;s ready! Add the scramble over rice and enjoy. I like to add hot sauce on mine too&#8230; but then I like hot sauce on everything. <img src='http://www.juliaholland.org/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
